Buffalo Cauliflower Bites

Buffalo Cauliflower Bites are addicting, zesty, and spicy little munchies that are sure to please! A vegetarian, low carb irresistible snack for Game Day... or really any day!

Ingredients
  

  • ¾ cup all-purpose flour
  • 1 teaspoon paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¾ cup milk use a bit more if batter is too thick
  • 1 large head of cauliflower
  • ¼ cup buffalo sauce or hot sauce Franks's Red Hot
  • 2 tablespoons butter

Instructions
 

  • Preheat the oven to 450˚F
  • Line a baking sheet with parchment paper or silpat silicone baking mat
  • In a large bowl, combine the flour, paprika, garlic powder, salt, pepper. Next whisk in the milk to make coating for the cauliflower. It shouldn't be too thick that, nor too runny. Think a little thinner than a pancake mix consistency.
  • Cut the head of cauliflower into florets, about 1½-inches wide. Add the cauliflower florets to the batter, making sure each piece is evenly coated. Arrange the coated cauliflower in a single layer on the baking sheet.
  • Bake for 20 minutes, flipping halfway. Remove cauliflower from the oven and bump up the temperature to broil.
  • Combine the buffalo sauce and melted butter in a small bowl. The butter will help the hot sauce adhere to the cauliflower.
  • Brush the buffalo sauce mixture on the cauliflower and return to the oven to broil and crisp. Keep on eye on it, to prevent burning. Depending on your oven, the cauliflower will take another 5-10 minutes to brown.
  • Remove from oven and let cool slighlty before serving.
