Ingredients
  

  • 2 lbs fingerling potatoes or other baby potato varietal
  • cup olive oil
  • ¼ cup fresh parsley fresh, chopped
  • cup chives fresh, chopped
  • 1 tbsp rosemary fresh, chopped
  • 1 tbsp thyme fresh, chopped
  • 1 tsp kosher salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions
 

  • Preheat oven to 425°F
  • Rinse potatoes under water and pat dry.
  • Place in baking dish with olive oil, herbs and spices. Toss to coat the potatoes.
  • Bake for 45 minutes until browned and soft enough to pierce.
  • Serve warm and enjoy!
