Roasted Fingerling Potatoes with Fresh Herbs

This recipe for Roasted Fingerling Potatoes with Fresh Herbs are the perfect vegetable side dish for any occasion. Delicate, papery skins crusted with savory seasonings and fresh herbs are roasted to perfection with a buttery inside and crisp burst of flavor in every bite.

Oh man, these little fingerlings are finger lickin’ good!

Roasted Potatoes are just so warm and cozy, they are a perfect vegetable side dish for practically any meal. In this recipe for Roasted Fingerling Potatoes I took advantage of the fresh herbs that I have left in my little garden before the cold weather sets in and they are no longer readily available for me to pick. I will certianly miss that aspect of summer!

HERBS and SPICES

The herbs I had on hand were:

  • Chives- Chives give the potatoes an aromatic, fresh delicate onion flavor.
  • Rosemary- Lends a fragrant earthy with lemony and minty tones.
  • Parsley- adds a bright freshness
  • Thyme- a floral, lemony note- similar to rosemary but a little more mild.

My go to Spices for Roasted Potatoes are:

  • Kosher salt- I prefer to use coarse salt in general, but especially when roasting because you can see the granules and they get a little crunch
  • Black pepper- White pepper would work too, but I think black is more classic
  • Garlic powder – For a little aromatic flavor. Make sure you are using garlic powder and not garlic salt! We don’t need a double dose of sodium
  • Smoked Paprika – I love paprika on roasted potatoes! Its burnt orange color makes the olive oil beautiful, plus it provides a note of earthy, smokiness with just a tinge sweetness to balance out the salt. I prefer Hungarian Smoked Paprika, but regular will do too.

HOW TO MAKE ROASTED HERB FINGERLING POTATOES:

This is sinfully simple! Simply, Preheat oven to 425°F , then rinse potatoes under water and pat dry. Remove herb leaves from stems, chop leaves and discard stems.

To prepare herbs, remove stems and chop leaves.

Place in baking dish with olive oil, herbs and spices. Toss to coat the potatoes.

Bake for 45 minutes until browned and soft enough to pierce.

Ingredients
  

  • 2 lbs fingerling potatoes or other baby potato varietal
  • cup olive oil
  • ¼ cup fresh parsley fresh, chopped
  • cup chives fresh, chopped
  • 1 tbsp rosemary fresh, chopped
  • 1 tbsp thyme fresh, chopped
  • 1 tsp kosher salt
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper

Instructions
 

  • Preheat oven to 425°F
