BUFFALO CHICKEN EGG ROLLS 2 cups shredded chicken BUFFALO CHICKEN EGG ROLLS
2 cups shredded chicken
1/3 cup sour cream
1/2 cup Buffalo sauce
1/4 cup scallions
2 tsp dried dill
1 tsp onion powder
1 tsp garlic powder 
Pinch of kosher salt
1 cup shredded cheddar cheese
1/4 crumbled blue cheese
1 tsp garlic powder 
Pinch of kosher salt
1 cup shredded cheddar cheese
1/4 crumbled blue cheese
1 package square eggroll wrappers
1. Preheat oven to 425 and line baking sheet with parchment paper 
2. In bowl combine chicken, sour cream, Buffalo sauce, scallions, spices, and cheese. Mix well. 
3. To assemble, spoon 2 tbsp of filling onto each wrapper. Brush water around edges.  Roll up and place on baking sheet. Brush with oil to crisp while baking. 
4. Bake 8-10 mins, then flip and bake another 8 minutes.  Or until wrappers are golden brown

ROASTED BUTTERNUT SQUASH AND BRUSSELS QUINOA SALAD ROASTED BUTTERNUT SQUASH AND BRUSSELS QUINOA SALAD 
Healthy, gluten-free, and easy as can be!! Roasted Butternut squash and brussels sprouts, quinoa, kale, apples, red onion, cranberries, feta cheese tossed in a maple dijion vinaigrette. 
Recipe here: 
Roasted Butternut & Brussels Quinoa Salad
2 cups cooked quinoa
½ pound brussels sprouts, ends trimmed, quartered 
2 cups butternut squash, cut into ½-inch cubes
2 cups chopped kale
2 tbsp olive oil
1 tsp salt 
¼ tsp pepper
1 apple, peeled and chopped
½ red onion, finely diced
½  cup dried cranberries
¼ cup feta cheese, crumbled
Maple Dijon Vinaigrette
⅓ cup extra virgin olive oil
¼ cup apple cider vinegar
1 tbsp dijon mustard
¼ cup lemon juice
2 tbsp maple syrup
½ tsp salt
½ tsp pepper
Instructions
Preheat oven to 400  degrees F. 
On one side of the baking sheet, spread out brussels sprouts. On the other side spread out cubed butternut squash. Drizzle with 2 tbsp olive oil and season with salt and pepper.  Place into oven and bake for 20 minutes for brussels sprouts and 30 minutes for butternut squash. Let it cool.
Make the vinaigrette by whisking olive oil, apple cider vinegar, mustard, lemon juice, maple syrup, salt, and pepper 
Layer the salad. Start with a quinoa base. Top with squash, brussels sprouts, kale,  apple, red onion, dried cranberries, feta cheese.
Drizzle vinaigrette right on top and toss together until coated well. Cover and place into refrigerator. Let it cool for at least 2 hours before serving.

is sooo good. Ground beef, veggies, a homemade chicken stock cream sauce, topped with cheese and crispy tater tots. Um, yes please! 
Cheesy Tater Tot Beef Casserole
:
2 lb ground beef
1 onion chopped
3 cloves garlic chopped
2 cup frozen vegetables, thawed
1 cup blanched green beans cut into 1” pieces
2 tbls Worcestershire sauce
1 tbls sriracha
3 cups shredded cheddar
1 tsp each cumin, oregano, smoked paprika
Homemade cream of chicken soup (recipe follows)
16 ounces frozen tater tots
Cream of chicken soup:
3 tbls flour
6 tbls butter
1 cup chicken broth
1 cup milk
salt and pepper to taste

Melt the butter in a small sauce pan and whisk in the flour. Stir until smooth and bubbly.
Slowly whisk in broth and milk. Increase heat and Bring to a simmer, whisking constantly, until the soup thickens. Season with salt and pepper to taste.
Preheat oven to 375F
Add the beef, onion, and garlic to a large skillet and cook until the beef is cooked through. Drain the fat and add the beef mixture to a large mixing bowl.
Add the vegetables, homemade cream of chicken soup, Worcestershire sauce, hot sauce and seasonings to the bowl and stir well to combine.
Spread the beef mixture into a baking dish. Sprinkle with the cheddar.
Arrange the tater tots in an even layer over the cheese.
Bake for 45 minutes or until the tater tots are golden brown.

Peanut Crusted Chicken Tenders
Preheat oven to 350°F
Pulse peanuts in food processor to a fine chop. Remove from food processor and combine with rice or Panko breadcrumbs in shallow bowl.
Continue to set up breading station by whisking eggs and water in 2nd shallow mixing bowl and then adding peanut flour in 3rd mixing bowl.
Season chicken tenders with salt, pepper, paprika and ground ginger.
Bread each chicken tender individually. Start with dredging in flour, followed by coating in egg wash and then breading with peanut mixture. Repeat with all of the chicken tenders.
Heat about 2 tbsp of oil on non-stick fry pan over medium high heat. When oil is very hot, add about 4 chicken tenders at a time (depending on size of skillet). Cook about 4 minutes on each side or until there is golden brown crust. Work through all the chicken tenders in same way. Placing crispy peanut crusted chicken tenders on baking sheet when finished.
Tenders will finish by baking in oven for 10-12 minutes. Do this step as you assemble to salad and dressing so you can add the chicken while it's still warm. After baking, slice peanut crusted tenders into strips and add to prepared salad OR serve alongside salad.
Chinese Chopped Salad and Peanut Ginger-Lime Dressing
Combine and whisk together ALL ingredients for dressing in mixing bowl. Set aside.
Combine chopped kale, red cabbage, shelled edamame, carrots, scallions, and mandarin oranges in large salad bowl. Toss with about ½ of the dressing and toss to coat.
Just before serving top salad with sliced chicken tenders, chopped peanuts, and chow mein noodles. Top with additional dressing to each serving.

Combine and whisk together ALL ingredients for dressing in mixing bowl. Set aside.
Combine chopped kale, red cabbage, shelled edamame, carrots, scallions, and mandarin oranges in large salad bowl. Toss with about ½ of the dressing and toss to coat.
Just before serving top salad with sliced chicken tenders, chopped peanuts, and chow mein noodles. Top with additional dressing to each serving.
Caprese Stuffed Balsamic ChickenJuicy, succulent chicken breasts stuffed with chopped arugula, tomatoes and fresh mozzarella cheese. Oven-baked and glazed with a tangy, sweet balsamic glaze and topped with more melty Mozzarella cheese. This simple, yet sophisticated dinner is ready in less than 60 minutes!

Ingredients
5 Chicken Breast boneless, skinless
2½ tsp salt divided , 1/2 tsp for caprese. 2 tsp for seasoning mix
½ tsp black pepper
2 tbsp olive oil
1 tsp dried basil
½ tsp dried oregano
1 cup halved grape tomatoes
2 cups fresh mozzarella divided. 1 cup- cubed , 1 cup- shredded
2 cups arugula leaves chopped
¼ cup basil leaves chopped
⅓ cup balsamic vinegar
2 tbsp brown sugar
1 clove garlic minced
Instructions
Preheat oven to 375° F
In medium sized mixing bowl, combine : tomatoes, arugula, basil, cubed fresh mozzarella, 2 tbsp of olive oil and ½ tsp of salt. Toss to combine and set aside. This will be the mixture to stuff the chicken.
Make the seasoning for the chicken by combining : 2 tsp salt, ½ tsp black pepper, 1 tsp dried basil, ½ tsp dried oregano in ramekin.
Partially butterfly chicken breasts,  You want to just cut a pocket for the filling, about 3/4 quarter of the way through. Start on the on the thickest side of each breast, being careful not to cut all the way. Season each breast inside and out with the homemade spice blend.
Fill each breast pocket with about ½ cup or more of the stuffing mix. Secure filling by inserting toothpicks on the outer edge of the stuffed side.
Add each stuffed chicken breast to a baking sheet. Set aside and make balsamic glaze.
Whisk together balsamic vinegar, brown sugar and minced garlic. Heat in nonstick skillet, bring to boil to thicken, about 5 minutes. Remove from heat and spoon over each stuffed chicken breast.
Place baking sheet in preheated oven and cook for 20 minutes.
Remove baking sheet from oven. Turn temperature to 425 degrees. Top chicken with shredded mozzarella cheese. Chicken is finished when internal temperature reaches 165°F and cheese is bubbly and brown, about another 10 minutes.
Remove from oven and serve with pan juices from the bottom of baking sheet spooned over top.

This simple, humble comfort food will have the whole family cheering, “Hooray”! Creamy Jasmine rice, plenty of vegetables and chicken breast are cooked to tender perfection in the Instant Pot. The head of garlic and lemon zest gives an extra wow factor of flavor and this one pot dinner is finished with grated cheese and fresh parsley. A perfect weeknight meal!
Ingredients
1 tbsp olive oil
1 onion diced
1½ cup carrots grated
1 red bell pepper diced
1½ lbs chicken breast or boneless skinless thighs, cubed
½ cup dry white wine
2 cups chicken stock
1 whole garlic slice crosswise
1 tsp lemon zest
1½ tsp kosher salt divided
¾ tsp black pepper divided
¼ cup parsley
½ cup Romano or Parmesan cheese grated
Instructions
1.Turn Instant Pot to "saute" and let pot heat. Add 1 tbsp olive oil.
2. Season the cubed chicken with 1 tsp salt and ½ tsp black pepper.
3. Once hot enough that you hear a sizzle when chicken hits pan, begin searing in batches. Likely 2 batches. Let chicken lightly brown on all sides and remove from pot. Repeat.
4. Add shredded carrots, onion, and pepper to the Instant Pot. Cook for about 3 minutes and then add white wine to deglaze. Try to scrape brown bits from the bottom of pan. Press "Cancel" to turn the saute function off.
5. Return chicken to pot, add chicken stock, lemon zest, ½ tsp salt, ¼ tsp pepper. Give a little stir. Then place halved garlic on top, cut side up.
6. Attach and seal lid to instant pot, set timer to 10 minutes and high pressure. Cook. When timer goes off, let pressure release naturally for 10 minutes before opening the quick release valve.
7. Remove cover, remove garlic. If you want to add cloves back to rice, do so to suit your own taste. I would recommend at least 2!
8. Stir in chopped parsley and grated Romano or Parmesan cheese. Serve hot.
