Recipe for pomme puree as follows. 
* note that the video shows a smaller amount of servings, the following recipe serves 8-10 people- perfect for your Thanksgiving gathering. *

POMME PUREE 
4 pounds Mashing Potatoes, Washed
1 1/3 cup Heavy Cream, Warmed
1 lb. Unsalted Butter, Diced (Danish Creamery Butter preferred)
Salt To Taste

Directions:
In a large pot, submerge the potatoes in heavily salted water. Bring to a boil over high heat, then reduce the heat to medium and simmer until fork tender, about 20 minutes. 

Drain the potatoes and cut them in half. With the skin on, press them through a wire tammis or very fine sieve with a bowl scraper. (Alternately, you can use a potato ricer.) Return to the pot.

Cook the potatoes over low heat, stirring, with a rubber spatula to let some of the excess water evaporate. 
Gradually add the milk, stirring to incorporate. Increase the heat to medium and mount the butter, one cube at a time, allow it to partially melt before adding the next cube.

Season the potatoes somewhat aggressively. 
Serve, keep warm, or chill and store the potatoes for later use.

Old-fashioned peach cobbler baked in cast iron skillet. Sweet, juicy peaches tossed in maple syrup and brown sugar baked under the easiest cobbler batter for a crispy edge but soft center. Perfectly paired with a big scoop of Vanilla ice cream!

Ingredients
  
1 stick butter
1 cup all-purpose flour
1 cup light or dark brown sugar divided
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1 cup milk
1 tablespoon vanilla
5-6 peaches cut into 8 wedges
2 tablespoons maple syrup

Instructions
 
Preheat the oven to 375° F. Drop the butter into a 9×13 inch baking dish and place the dish in the oven to melt, about 10 minutes.
To make the batter. Stir together the flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt. Add the milk and vanilla, mix until just combined.
In a bowl, toss the peaches with 1/4 cup brown sugar and the maple syrup.
Layer half of the peaches over the melted butter. Then, pour over the batter, do not stir. Layer the remaining peaches over the batter. Bake 50-55 minutes, until the center is just set and the edges begin to brown.
Serve the cobbler warm or at room temp with ice cream.

White bean artichoke and feta dip is a 5-minute dip recipe with white beans, artichokes, fresh herbs, lemon juice, greek yogurt, and feta cheese -an intriguing alternative to hummus!



14 ounce can Artichoke Hearts drained excess juice squeezed out
15 ounce can White Beans rinsed and drained
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Lemon Juice
¼ cup Feta Cheese
¼ cup greek yogurt
½ tsp thyme fresh
1 tsp parsley fresh
½ tsp rosemary fresh
1 tsp salt
½ tsp pepper


1.Place artichokes, white beans, olive oil, lemon juice, Greek yogurt, salt, and pepper in a food processor fitted with the chopping blade. Pulse ingredients until creamy.
Add fresh herbs and feta cheese. Blend until smooth. Taste, add more salt to taste, if desired
Serve immediately, or refrigerate in an airtight container up to 5 days.
Juicy sautéed shrimp cooked in a flavorful lemon garlic butter sauce. Perfect for an appetizer at your next party, or as a main course. Garlic Butter Shrimp is a quick and easy recipe, that will be ready in 20 minutes or less-start to finish!

INGREDIENTS

1 lbs large raw shrimp peeled and devined, with/without tail
2 tbsp garlic minced about 6 cloves
3 tbsp lemon juice fresh squeezed
4 tbsp butter unsalted
2 tbsp olive oil
½ tsp kosher salt
⅛ tsp cayenne pepper
1 tbsp lemon zest
1 tsp paprika
¼ cup chopped parsley fresh

INSTRUCTIONS
 
Pat the shrimp dry with paper towels and place in a large bowl.
Add seasoning: salt, cayenne pepper, lemon zest, paprika. Toss to coat.
Heat 2 tablespoons of butter and olive oil in a large skillet over medium heat until it melts. Add the shrimp in a single layer and let cook undisturbed for 1 minute. With tongs or a wide spatula, turn over the shrimp. Cook for another minute on opposite side.
Add another 2 tbsp, of butter to melt. Add garlic. DO NOT BURN GARLIC! Add lemon juice and let the lemon butter sauce simmer for about 1 minute and remove the skillet from heat.

 ROASTED ACORN SQUASH WITH HARVEST WILD RICE MEDLEY 

Ingredients: 
Maple Roasted Acorn Squash
2 acorn squash halved with seed scooped
¼ tsp black pepper
½ tsp salt
1 tbsp olive oil
1 tbsp maple syrup

Maple Roasted Pecans
¾ cup pecans
1 tbsp olive oil
1 tbsp maple syrup
¼ tsp cayenne pepper

Harvest Wild Rice Medley
1 Granny Smith Apple peeled, cored and diced
½ yellow onion chopped
2 celery stalks chopped
1 cup wild rice blend or wild rice measured uncooked
2 tbsp butter
½ cup dried cranberries
1 tbsp chopped sage
1 tsp chopped thyme
1 tsp chopped rosemary
½ tsp salt divided
1 tbsp maple syrup
½ tsp cinnamon

EQUIPMENT
1 Pressure Cooker 6 or 8 quart

INGREDIENTS

For the Pressure Cooker:
3.5 lb rack pork spare ribs membrane removed
1 inch knob fresh ginger
2 clove garlic
3 scallion stems white and light green (save green parts for garnish)
1 3 inch sheet of kombu seaweed
1 cup water
1 tbsp apple cider vinegar
Salt and pepper- to season meat
Sticky Soy Sauce:
¼ cup reserved and strained cooking liquid from the pressure cooker
¼ cup soy sauce
2 tbsp honey
½ cup dark brown sugar
1 tbsp gochujang
2 tbsp rice wine vinegar
1 tbsp cornstarch mixed with 2 tbsp water

INSTRUCTIONS
 
Remove the membrane from the underside of the ribs, pulling it down the entire length with a paper towel (because it's very slippery!) Pat dry with a paper towel and season with salt and pepper.
Place the metal steam rack into a 6 or 8-QT Instant Pot. Place the seasoned ribs on the rack. Due to the length of the rack of ribs, you will have to wrap around the perimeter of the pot, meaty side outward. Add water, apple cider vinegar, kombu, scallion, garlic, ginger to the instant pot.
Attach lid to Pressure Cooker. Select Manual setting; adjust the pressure to high, and set time for 30-35 minutes (if you want the meat to fall off the bone, do 35 minutes)When finished cooking, natural release for 10 minutes, then quick release.
Carefully remove ribs from pot and set on foil-lined baking sheet (with rack, preferably), and set aside. Reserve ¼ cup of strained flavorful cooking liquid from Instant Pot.
Preheat oven to 425 degrees and position an oven rack to top ⅓ of oven. (This is where you will be broiling the ribs)
To make sticky soy glaze. Combine cooking liquid, soy sauce, brown sugar, honey, gochujang, and rice wine vinegar in a small sauce pan. Bring to boil over medium-high heat. Whisk in cornstarch/water slurry, and continue to boil to thicken. The sauce should coat back of a spoon.
Brush ⅓ of the glaze on the top and bottom of ribs. Slide in oven on top rack and roast for 5 minutes. Remove and brush the top only with an additional ⅓ glaze, Return to oven for another 5 minutes. Remove and brush the top with the remaining ⅓ of the glaze and return for the final 5 minutes of caramelizing the sticky glaze.
Garnish sticky ribs with sliced scallions and sesame seeds. Cut in between bones to serve as single rib portions, or slice in sets of 2 or 3 ribs for larger portions.
