Hot Honey Salmon
1.5 lbs salmon about 4 filets
1/2 cup soy sauce
1/4 cup  Hot Honey (store-bought or *see note for homemade*
2 tablespoon lemon juice
1 inch peeled fresh ginger sliced thin
3 cloves garlic smashed
Winter Citrus and Pomegranate Salad
2 navel or Cara Cara oranges
2 ruby red grapefruit
1/4 cup pomegranate arils
2 tablespoons extra virgin Greek olive oil
1 teaspoon honey
1 tablespoon lemon juice
pinch of salt to taste cilantro or mint leaves to garnish

INSTRUCTIONS
 
Hot Honey Salmon
Whisk soy sauce, hot honey, lemon juice, ginger, and garlic together until the honey dissolves. Place salmon fillets, skin-side up, in the marinade. Allow marinating for 30-60 minutes.
Preheat the broiler to high.
Remove salmon from the marinade and transfer to a sheet pan lined with parchment paper. Put the salmon under the broiler skin-side down, and broil without turning until the exterior is well-caramelized and the fish is just cooked through, 7-10 minutes, depending on thickness and the distance from the broiler.

Chipotle Lime Grilled Chicken Tender, juicy grille Chipotle Lime Grilled Chicken
Tender, juicy grilled chicken thighs marinated in a blend of smokey chipotle peppers, citrusy lime, a touch of honey, and dried spices. These are so versatile, and I make them all the time! This week, I'll be chopping up and adding to rice bowls!

Don't forget to SAVE the recipe to use in the future! 

INGREDIENTS
  2 to 2.5 lbs chicken thighs boneless and skinless
2 whole chipotle peppers in adobo plus 2 tbs of adobo sauce
¼ cup lime juice
2 tbsp vegetable oil
1 clove garlic
2 tbsp honey
1 tsp chili powder
1 tsp cumin
1 tsp salt

INSTRUCTIONS
 Using a food processor, blender, or immersion blender, process chipotle peppers, adobo sauce, lime juice, oil, garlic, honey, and spices until smooth consistency.
Cover chicken with marinade in a container of choice and refrigerate for at least one hour. If you have more time, let it marinade for up to 4 hours.
When ready to cook, remove chicken from fridge and set aside at room temperature for 20-30 minutes.
Preheat your grill to medium-high heat and lightly oil the grates.
Add the chicken to the grill and brush liberally with any leftover sauce. Close grill cover, Cook for approximately 6–7 minutes per side.
Chicken is done when it reaches an internal temperature of 165F.

SAVE and SHARE this recipe for Instant Pot Chicken Stock and make sure u have a couple quarts waiting for you in your freezer all cold and flu season!!

3 pounds chicken wings or 3-4 lbs whole chicken if using meat for soup or other purpose
1 medium yellow onion cut in half
2 medium carrots cut in half
2 large celery ribs cut into thirds
1 head garlic cut in half
2 bay leaves
10 stems fresh flat leaf parsley
10 stems fresh thyme
1 tsp whole peppercorns
2 tsp sea salt
2 tbsp apple cider vinegar
INSTRUCTIONS
 
Add all ingredients to the instant pot. Add water just to the max fill line.
Secure the lid with a valve set to seal. Using the manual pressure cook setting, set pressure cooker to high for 45 minutes. Once cook time has finished, allow it to naturally release for at least 30 minutes. Turn the release valve to vent and remove the lid.
Remove the chicken from the pot. Reserve the meat for future use (chicken soup would be a great idea, that's what I did!)
Strain out vegetables and herbs, discard.
Pour chicken stock through a fine mesh strainer and then again through a fine mesh strainer with lined with a cheesecloth to catch the smallest impurities before storing in an airtight container.
Let the stock cool to room temperature before refrigerating or freezing. Stock can be stored in the refrigerator for 5 days or in the freezer for up to 6 months.

Recipe for Spinach Risotto : 

Ingredients:
10 oz bag of baby spinach
Handful of fresh parsley leaves
½ cup sweet white onion minced
3 garlic cloves minced
4 cups chicken stock
½ cup dry white wine
1 cup Arborio rice
4 Tbsp. unsalted butter divided
4 Tbsp. olive oil divided
1 tsp. lemon zest
2 tsp. lemon juice
½ cup Parmesan cheese
1 tsp. salt
¼ tsp. fresh cracked black pepper

INSTRUCTIONS
 
MAKE SPINACH PURÉE:
Pour the chicken stock into a medium pot and bring to a boil. Blanch the spinach and parsley in the stock for 30 seconds until wilted and bright green, then remove with a slotted spoon and leave to cool for a moment.
Turn the stock down to low heat. Squeeze out any excess stock from the spinach and parsley back into the pot it was blanched in; you will use this stock to make the risotto. Add spinach/parsley to a food processor and purée to a very smooth consistency.
MAKE RISOTTO:
In a large skillet, heat 2 Tbsp. butter and 2 Tbsp. olive oil over medium heat until the butter is melted. Add the minced onion and cook for about 2 minutes until tender. Add the garlic and dry rice and cook, stirring occasionally, to coat rice with oil and butter, about 2 mintues.
Add wine and cook, stirring occasionally, until the liquid is fully absorbed. About 2 mintues.
Add two ladles of hot chicken stock to the risotto. Cook, stirring occasionally, until the liquid is fully absorbed, then add two more ladles of stock. Cook in this same manner for about 12 minutes, adding two ladles and stirring frequently. Adjust the heat to ensure the risotto is at a steady simmer. After a total of 20-25 minutes, taste a grain of rice. It should be creamy with a bit of bite to it still (al dente).
Reduce the heat to low. Add the spinach purée and a bit more stock to loosen and incorporate into rice. Add Parmesan cheese, 2 Tbsp. butter, 2 Tbsp. olive oil, salt, black pepper, lemon juice, and zest. Stir vigorously for 1 to 2 minutes.

Super easy Grilled Pork Tenderloin with a not so f Super easy Grilled Pork Tenderloin with a not so fancy marinade full of pantry staples that I bet you already have on hand!! 
 
Don't forget to Share and Save! 

2 lbs Pork tenderloin
¼ cup vegetable oil
2 tbsp whole-grain mustard or dijion
2 tbsp soy sauce
2 maple syrup
1 tbsp sriracha 
½ tsp onion powder
½ tsp garlic powder

Trim fat and silver skin off pork tenderloin
Whisk together marinade ingredients
Transfer the prepared tenderloin and marinade in ziplock bag. Seal and refrigerate for 24 hours

Preheat grill to medium and oil the grates.
Using tongs, transfer pork to the grill. Close the grill and cook 15-20 minutes, turning every few minutes to ensure even cooking and brushing reserved marinade over all sides of the pork half way through grilling.

Remove from grill and let rest 5 min before slicing to serve!

4 oz fresh mozzarella

BOAT SNACKS... I was gonna do the traditional can BOAT SNACKS... 
I was gonna do the traditional cantaloupe , prosciutto,  tomato combo, but guess what I didn't have those ingredients hand and I don't have time to run out the the market.  This is what I had to work with and I feel like I just cracked some new magic code, cause damn this WORKS!!

Baked chicken thighs in a sticky, sweet, and tangy BBQ sauce flavored with peach preserves and a splash of Bourbon. 

INGREDIENTS
 
6 Boneless skinless chicken thighs
2 tbsp butter

Delicious and healthy homemade chicken stock in a fraction of the time using the Instant Pot pressure cooker!

Starting with a base of chopped kale and red cabbage, layers of mandarin oranges, edamame and peanuts, scallions dressed with a homemade ginger-lime peanut dressing. Crispy, crunchy peanut crusted chicken tenders makes this a healthy and satisfying dinner or lunch for any occasion!

Peanut Crusted Chicken Tenders
Preheat oven to 350°F
Pulse peanuts in food processor to a fine chop. Remove from food processor and combine with rice or Panko breadcrumbs in shallow bowl.
Continue to set up breading station by whisking eggs and water in 2nd shallow mixing bowl and then adding peanut flour in 3rd mixing bowl.
Season chicken tenders with salt, pepper, paprika and ground ginger.
Bread each chicken tender individually. Start with dredging in flour, followed by coating in egg wash and then breading with peanut mixture. Repeat with all of the chicken tenders.
Heat about 2 tbsp of oil on non-stick fry pan over medium high heat. When oil is very hot, add about 4 chicken tenders at a time (depending on size of skillet). Cook about 4 minutes on each side or until there is golden brown crust. Work through all the chicken tenders in same way. Placing crispy peanut crusted chicken tenders on baking sheet when finished.
Tenders will finish by baking in oven for 10-12 minutes. Do this step as you assemble to salad and dressing so you can add the chicken while it's still warm. After baking, slice peanut crusted tenders into strips and add to prepared salad OR serve alongside salad.
Chinese Chopped Salad and Peanut Ginger-Lime Dressing
Combine and whisk together ALL ingredients for dressing in mixing bowl. Set aside.
Combine chopped kale, red cabbage, shelled edamame, carrots, scallions, and mandarin oranges in large salad bowl. Toss with about ½ of the dressing and toss to coat.
Just before serving top salad with sliced chicken tenders, chopped peanuts, and chow mein noodles. Top with additional dressing to each serving.
