20 oz Sourdough bread roughly torn into 1 ½ inch pieces
3 tbsp melted butter unsalted
1 tsp garlic powder
½ tsp kosher salt
3 tbsp fresh chopped herbs sage, rosemary, and thyme recommended

2 lbs sweet Italian pork sausage loose or casing removed if necessary
1 yellow onion chopped

3 cups chicken stock

CRANBERRY SAUCE WITH APPLES AND ORANGE ZEST This CRANBERRY SAUCE WITH APPLES AND ORANGE ZEST

This recipe for homemade cranberry sauce will be a staple on your Thanksgiving table, as it has been on mine for over ten years! It is the perfect tangy and sweet accompaniment to the big bird at your feast, using fresh cranberries, apples, warm spices, and a little orange zest for some extra pizzazz!

Ingredient 
2 12 oz bags fresh cranberries rinsed and picked through rinsed and picked through
1½ cups sugar add ½ cup more if you like very sweet
1 apple i prefer granny smith, about 1½ cup
2 cups water-infused
½ orange rind
1 orange fresh squeeze juice
¼ tsp ground cinnamon
⅛ tsp ground cloves

INSTRUCTIONS
 
1. Wash orange and remove rind. Squeeze the juice from the orange and reserve. In a small saucepan over high heat, combine the rind and the water and bring to a boil. Cook for 10 minutes, then remove orange peel.
2. Peel, core and quarter the apple. Cut into 1/2-inch dice and place in a saucepan with the orange infused water. Sort the cranberries, discarding any soft or brown ones.
3. Sort the cranberries, discarding any soft or brown ones. Combine cranberries, apple, orange infused water, orange juice, sugar, cinnamon, and cloves.
4. Bring to a boil over high heat, lower heat, and cover the pan partially. Simmer gently, stirring occasionally, until the sauce thickens, the apple is tender and the cranberries have burst, 10 to 15 minutes.
5. Transfer the cranberry sauce to a heatproof bowl and let cool for 1 hour before serving. Or cover and refrigerate; bring to room temperature before serving.

Pancakes: 
Ingredients
2 1/4  cups milk
12 oz cup pumpkin puree
2 large egg
3 tablespoons vegetable oil
1 tbsp vanilla extract
3 tablespoons vinegar
3 cups all-purpose flour
1/4 cup brown sugar
3 teaspoons baking powder
1.5 teaspoon baking soda
1 teaspoon ground allspice
1.5 teaspoon ground cinnamon
½ teaspoon ground ginger
3/4 teaspoon salt
Dicrections: 
Directions
1. Stir milk, pumpkin, egg, sugar, vanilla, oil, and vinegar together in a large bowl until well combined.
2. Whisk flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt together in a separate bowl. Add to wet ingredients; whisk just until combined.
3. Spray a griddle or frying pan with cooking spray; heat over medium-high heat.
4. Pour 3 to 4 tablespoons batter for each pancake onto the hot griddle and flatten batter slightly with a spoon.
5. Cook until small bubbles appear, about 2 minutes.
6.Flip and cook until golden brown, about 2 more minutes. Repeat with remaining batter.
Makes about 20-24 pancakes

Apple Compote: 
Ingredients--
3 medium apples, peeled cored diced
1/4 cup brown sugar
3 tbsp butter
1 tsp cinnamon
Directions: 
1. Melt butter and brown sugar together in a medium saucepan, add apples and cinnamon. 
2. Stir to combine, cover, and cook apples over low heat. Stir often, will take about 15  minutes til the apples are soft.

EQUIPMENT
1 Pressure Cooker 6 or 8 quart

INGREDIENTS

For the Pressure Cooker:
3.5 lb rack pork spare ribs membrane removed
1 inch knob fresh ginger
2 clove garlic
3 scallion stems white and light green (save green parts for garnish)
1 3 inch sheet of kombu seaweed
1 cup water
1 tbsp apple cider vinegar
Salt and pepper- to season meat
Sticky Soy Sauce:
¼ cup reserved and strained cooking liquid from the pressure cooker
¼ cup soy sauce
2 tbsp honey
½ cup dark brown sugar
1 tbsp gochujang
2 tbsp rice wine vinegar
1 tbsp cornstarch mixed with 2 tbsp water

INSTRUCTIONS
 
Remove the membrane from the underside of the ribs, pulling it down the entire length with a paper towel (because it's very slippery!) Pat dry with a paper towel and season with salt and pepper.
Place the metal steam rack into a 6 or 8-QT Instant Pot. Place the seasoned ribs on the rack. Due to the length of the rack of ribs, you will have to wrap around the perimeter of the pot, meaty side outward. Add water, apple cider vinegar, kombu, scallion, garlic, ginger to the instant pot.
Attach lid to Pressure Cooker. Select Manual setting; adjust the pressure to high, and set time for 30-35 minutes (if you want the meat to fall off the bone, do 35 minutes)When finished cooking, natural release for 10 minutes, then quick release.
Carefully remove ribs from pot and set on foil-lined baking sheet (with rack, preferably), and set aside. Reserve ¼ cup of strained flavorful cooking liquid from Instant Pot.
Preheat oven to 425 degrees and position an oven rack to top ⅓ of oven. (This is where you will be broiling the ribs)
To make sticky soy glaze. Combine cooking liquid, soy sauce, brown sugar, honey, gochujang, and rice wine vinegar in a small sauce pan. Bring to boil over medium-high heat. Whisk in cornstarch/water slurry, and continue to boil to thicken. The sauce should coat back of a spoon.
Brush ⅓ of the glaze on the top and bottom of ribs. Slide in oven on top rack and roast for 5 minutes. Remove and brush the top only with an additional ⅓ glaze, Return to oven for another 5 minutes. Remove and brush the top with the remaining ⅓ of the glaze and return for the final 5 minutes of caramelizing the sticky glaze.
Garnish sticky ribs with sliced scallions and sesame seeds. Cut in between bones to serve as single rib portions, or slice in sets of 2 or 3 ribs for larger portions.

To make sticky soy glaze. Combine cooking liquid, soy sauce, brown sugar, honey, gochujang, and rice wine vinegar in a small sauce pan. Bring to boil over medium-high heat. Whisk in cornstarch/water slurry, and continue to boil to thicken. The sauce should coat back of a spoon.
Brush ⅓ of the glaze on the top and bottom of ribs. Slide in oven on top rack and roast for 5 minutes. Remove and brush the top only with an additional ⅓ glaze, Return to oven for another 5 minutes. Remove and brush the top with the remaining ⅓ of the glaze and return for the final 5 minutes of caramelizing the sticky glaze.
Garnish sticky ribs with sliced scallions and sesame seeds. Cut in between bones to serve as single rib portions, or slice in sets of 2 or 3 ribs for larger portions.

Delicious and healthy homemade chicken stock in a fraction of the time using the Instant Pot pressure cooker!

3 pounds chicken wings or 3-4 lbs whole chicken if using meat for soup or other purpose
1 medium yellow onion cut in half
2 medium carrots cut in half
2 large celery ribs cut into thirds
1 head garlic cut in half
2 bay leaves
10 stems fresh flat leaf parsley
10 stems fresh thyme
1 tsp whole peppercorns
2 tsp sea salt
2 tbsp apple cider vinegar
INSTRUCTIONS
 
Add all ingredients to the instant pot. Add water just to the max fill line.
Secure the lid with a valve set to seal. Using the manual pressure cook setting, set pressure cooker to high for 45 minutes. Once cook time has finished, allow it to naturally release for at least 30 minutes. Turn the release valve to vent and remove the lid.
Remove the chicken from the pot. Reserve the meat for future use (chicken soup would be a great idea, that's what I did!)
Strain out vegetables and herbs, discard.
Pour chicken stock through a fine mesh strainer and then again through a fine mesh strainer with lined with a cheesecloth to catch the smallest impurities before storing in an airtight container.
Let the stock cool to room temperature before refrigerating or freezing. Stock can be stored in the refrigerator for 5 days or in the freezer for up to 6 months.
