A cool and refreshing summertime staple, Creamy Italian Cucumber Salad is a perfect lunch or healthy snack option  made with pantry staples and ready to eat in under 10 minutes. Fresh, crisp cucumbers are thinly sliced and served with a simple dressing of mayo, lemon juice, red wine vinegar, olive oil, honey, and Italian seasonings.

Ingredients
  

  • 1 large English Cucumber thinly sliced with mandolin
  • 1/2 juice lemon fresh squeeze
  • 1 clove garlic grated
  • 3 tbsp mayo `
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp Italian Seasoning blend
  • 1 tsp honey
  • salt and pepper

Instructions
 

  • Use Mandolin to thinly and uniformly slice the cucumber.
  • Combine all ingredients in container and mix (or shake if it has a lid)
  • Ready to serve or refrigerate for up to 24 hours.
