Happy Halloween!!!!!

Ok not a vegetable dip.. but he’s just too cute!

In our family, we usually gather together with friends for a pre-trick-or-treating dinner. Very simple stuff: cheese trays, chips and dips, festive appetizers, veggie platter..

So, as you can see- this year, I’m on the Veggie Platter! Scoff if you must, but in light of the the sugar rush that will soon be coursing through all these children’s brains I really want them to eat a dinner of substance. Of course, this is partially selfish as I am looking to quiet the “mom guilt” voices in my head regarding the deficit in healthy choices for the day!

I lined the hollowed out pumpkin with plastic wrap to prevent the pumpkin flavor from seeping in

Tonight, I wanted to make a dip that would encourage, even the biggest veggie haters, to have a few nibbles.

And I seriously NEVER get to blog and post a recipe on the same day as I made it, but I’m hoping to get this Dip recipe out to you in time for your pre trick-or-treat meal!

Have fun, be safe…. and remember— eat your veggies— even if it requires slathering on copious amounts of this totally addicting vegetable dip!!
