My youngest son sent me an Instagram reel where this pretty young lady (gee ..I wonder how this showed up in his algorithm :)) effortlessly mixed thinly sliced cucumbers with some on hand pantry staples, shook it all up and BOOM- lunch was served. It’s late August right now and I feel like I’ve made about a million lunches at this point so if my boy wants to get excited about slicing up a cucumber and calling it a meal, I’m all in!

Creamy Italian Cucumber Salad
Ingredients
- 1 large English Cucumber thinly sliced with mandolin
- 1/2 juice lemon fresh squeeze
- 1 clove garlic grated
- 3 tbsp mayo `
- 1 tbsp red wine vinegar
- 1 tbsp olive oil
- 1 tsp Italian Seasoning blend
- 1 tsp honey
- salt and pepper
Instructions
- Use Mandolin to thinly and uniformly slice the cucumber.
- Combine all ingredients in container and mix (or shake if it has a lid)
- Ready to serve or refrigerate for up to 24 hours.
