Canned white beans, canned artichokes, fresh herbs, lemon, feta cheese, and Greek yogurt are all you need to make this tangy, flavorful dip with a similar consistency to hummus. It’s an elegant appetizer or weekly meal prep snack to keep in the fridge and enjoy as a health-conscious snack.

Ingredients Needed:

  • White Beans: I had great northern white beans in my pantry, but cannellini beans have a very similar flavor and texture.
  • Artichoke Hearts: packed in water not oil
  • Lemon Juice: fresh squeezed
  • Garlic: optional
  • Feta Cheese
  • Greek Yogurt: or sour cream
  • Olive Oil: extra virgin
  • Herbs: thyme, rosemary and parsley
  • Salt and Pepper

How to serve artichoke bean dip

Serve this dip with crunchy crostini, veggies, soft bread, or crackers for parties or packed in your lunch. To serve for parties, spread the dip over a plate drizzled with a little extra virgin olive oil and fresh herb sprigs. As with most dip recipes, when made in advance and, refrigerated, it allows the flavors of the dip to bloom and meld. So if you have time, I recommend making this dip 24 hours before serving for optimal flavor.

Ingredients
  

  • 14 ounce can Artichoke Hearts drained excess juice squeezed out
  • 15 ounce can White Beans rinsed and drained
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Lemon Juice
  • ¼ cup Feta Cheese
  • ¼ cup greek yogurt
  • ½ tsp thyme fresh
  • 1 tsp parsley fresh
  • ½ tsp rosemary fresh
  • 1 tsp salt
  • ½ tsp pepper

Instructions
 

  • 1.Place artichokes, white beans, olive oil, lemon juice, Greek yogurt, salt, and pepper in a food processor fitted with the chopping blade. Pulse ingredients until creamy.
  • Add fresh herbs and feta cheese. Blend until smooth. Taste, add more salt to taste, if desired
  • Serve immediately, or refrigerate in an airtight container up to 5 days.
